Cold Hemp Pasta Salad with Cherry Tomatoes, Olives & Mozzarella

Serving Size: 2 oz dry pasta

Ingredients

  • Hemp-enriched pasta – 2 oz

  • Cherry tomatoes, halved – ½ cup

  • Kalamata or Castelvetrano olives, sliced – 2 tbsp

  • Buffalo mozzarella or fiordilatte, diced – 2 oz

  • Extra virgin olive oil – 1½ tbsp

  • Red wine vinegar – 1 tsp

  • Fresh basil or oregano, torn – 1 tbsp

  • Black pepper – to taste

  • Salt – minimal, to taste

Preparation

  1. Cook pasta, then shock in cold water and drain thoroughly.

  2. Toss pasta with olive oil and vinegar.

  3. Fold in tomatoes, olives, and mozzarella gently.

  4. Finish with herbs and black pepper.

  5. Chill before service.
